ORANGE DELIGHT COOKIES
Preheat oven to 400°
Cookies:
Sift together and set aside:
2 cups flour
½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
Cream together until light and fluffy:
2/3 cup unsalted butter
¾ cup sugar
Add and mix until well combined:
1 egg
2 T. orange zest
Add flour mixture to butter mixture adding alternately 3 times with
½ cup fresh squeezed orange juice
Drop by tablespoons onto ungreased cookie sheet at least 1 ½ inches apart. Bake 8-10 minutes. Remove and cool on wire racks at least 30 minutes before frosting.
Orange Frosting:
Cream together until light and fluffy:
2 ½ T. unsalted butter
1 ½ cups confectioners’ sugar
Add and mix until smooth:
2 T. orange zest
1 ½ – 2 T. orange juice (may need a bit more to get desired consistency)
Spread on cooled cookies.
Makes about 30 cookies.
(My tip would be to always be generous with zest. Don’t skimp.)
