Waldorf Red Cake
1/2 cup shortening
1 1/2 cups sugar
2 eggs
1/4 cup red food coloring
1 tsp. vanilla
1 tbsp. cocoa
1 tsp. salt
1 cup buttermilk
2 1/2 cups cake flour, plus 2 Tbsp.
1 tsp. vinegar
1 tsp. soda
Cream shortening and sugar until fluffy. Add eggs and beat. Make a paste of coloring and cocoa; add salt, buttermilk, flour and vanilla.
Mix vinegar and soda, just blending in. Bake in two 9 in. layers, 350 degrees for 20-30 minutes. Let cool, split layers.
Frosting:
Cook 5 Tbsp. flour and 1 cup milk until thick. Cool. Beat 1/2 lb. butter and 1 cup powdered sugar until like whipped cream. Add milk, and 1 tsp.vanilla and beat.
As I recall, Mom would put vanilla pudding between the layers and frost with the above. It was my favorite and she usually made it for me for my birthday. If you try this, let me know what you think.
