GLAZED FRESH APPLE COOKIES
Preheat oven 400°
Cream until well combined:
½ cup butter
1 1/3 cups brown sugar
Add and beat well:
1 egg
Sift together:
2 cups flour
½ tsp. baking soda
½ tsp. baking powder
½ tsp. salt
1½ tsp. cinnamon
½ tsp. nutmeg
Add flour mixture to cream mixture alternating with:
¼ cup apple juice
(begin and end with flour mixture, 1/3 flour, ½ juice, 1/3 flour, ½ juice, 1/3 flour)
Stir in:
1 cup chopped walnuts or pecans
1 cup raisins
1 cup finely chopped unpeeled tart apple (Granny Smith)
Drop by teaspoons on greased cookie sheets @ 2 inches apart. Bake for 9-12 minutes.
After baking, remove cookies immediately from baking sheet. Glaze cookies while still hot.
Apple Glaze:
Cream:
1 T. butter
1 ½ cups powdered sugar
1/8 tsp. salt
Stir in:
2 ½ T. apple juice
¼ tsp. vanilla
