Barbara’s Guacamole
1 avocado, cut up, not mashed
1 clove garlic, roasted, mashed, and chopped
6 thin slices onion, roasted, and chopped fine
1 squeeze fresh lime juice
1/2 roasted jalapeno pepper, peeled, seeded, chopped fine
1-2 T chopped cilantro
1/4 tomato, chopped
salt to taste
I make it using the same proportions without roasting anything, too, and it still turns out good, just with a sharper taste. The roasting mellows everything, obviously. It just depends which taste you’re in the mood for. Enjoy!
