Matthew McConaughey's Tuna Salad

Matthew McConaughey was on the 2 Bears, 1 Cave podcast discussing his go to Sunday tradition. He describes the Tuna Salad that he makes, and it sounds crazy - so I made it, and it was delicious. Here is my rendition of the recipe based on my Tuna Salad preferences, and what he describes on the podcast.

Ingredients

  • 1/2 Cup Mayonnaise

  • 1 Tablespoon Fresh Lemon Juice

  • 1 Tablespoon Apple Cider Vinegar

  • 2 Teaspoons of Italian Salad Dressing

  • 1 Tablespoon of Agave Nectar

  • 1 Tablespoon Wasabi Paste or Wasabi Powder

  • 2 Cans of Tuna, Drained

  • 1/3 Cup Red Onions, Diced

  • 1/3 Cup Dill Pickles or Gherkins, Diced

  • 1 Green Apple, Diced

  • 1 Cob of Corn, Kernels Removed (or use 1/3 Cup Frozen Corn)

  • 1/3 Cup Frozen Peas

  • 1 Cup Jalepeno Chips*

Directions

  • Mix Mayo, Lemon Juice, Apple Cider Vinegar, Italian Dressing, Agave Nectar, and Wasabi together.
  • Add 2 cans of drained Tuna
  • Add Red Onions, Pickles, Apples, Corn, and Frozen Peas.
  • Top with Jalepeno Chips. I suggest adding these as a topping rather than mixing it in. The crispiness will turn to soggy pretty quickly.
  • Serve immediately, or cover and let sit overnight in fridge.

Notes

  • Matthew McConaughey is from Texas, and his version of Jalepeno Chips is likely not what you are thinking. He could be refering to sliced Jalepenos, but all of the comments I saw on this said he's probably talking about crispy Jalepenos. These can be found in the produce section of the grocery store near the croutons, tortilla strips and other salad toppings.
  • Ideally you let the salad "coagulate" overnight so ther flavors can merry, but it is delivious and can be served immediatly.
  • I chose to serve mine openfaced on a slice of toasted homemade sourdough bread, but you do you. Eat it alone, with crackers, 2 slices of bread, or with Jalepeno Kettle Chips.
