Betsy’s Soft Molasses Cookies
Stir together:
2 1/4 C flour
2 t baking soda
1/2 t salt
11/2 t cinnamon
1 t ginger
3/4 t cloves
1/4 t allspice
Cream together:
12 T (1 & 1/2 sticks unsalted butter)
1/2 C dark brown sugar, packed
1/2 C sugar
Add and beat:
1 large egg
1 t vanilla
1/3 C un-sulphured molasses
Place 1/3 C sugar in a small bowl and working with 2T of dough, roll into 13/4 inch balls.
Roll balls in sugar and place on ungreased cookie sheet about 1 -2 inches apart.
Bake for 8 – 11 minutes until outer edges begin to set and centers are soft and puffy.
Cool cookies on sheets for 2 or 3 minutes before transferring to cooling racks.
Do not over bake!
