I am starting to post some recipes for diabetic patients.  Please see  the Diabetic category on the left side of the screen.  If you click on that, the recipes that are diabetes friendly will be posted there.

Chocolate Sauce
 
3 – 1 Oz. Squares of Chocolate
1 ¾ Cup Canned Milk
¼ Tsp Salt
1 Tsp. Butter

1 Cup Sugar
¼ Cup Flour
1 Tsp Vanilla

CINNAMON BREAD
 
In a small saucepan combine and scald over medium heat:
          2 cups milk
          2 T. shortening (1 T. lard and 1 T. vegetable shortening)

MARINATED SHRIMP HORS D’OEUVRES
A colorful hors d’ouvres served on a cabbage.  The recipe can be doubled or tripled for large occasions.
 
 
1 BAY LEAF
1 POUND LARGE SHRIMP (28 to 30), PEELED AND DEVEINED
15 –20 SNOW PEAS
1 SMALL GREEN CABBAGE
 
VINAIGRETTE:
½ CUP OLIVE OIL
3 TBL WHITE WINE VINEGAR
3 TBL DIJON MUSTARD
1 TBL SHALLOTS, CHOPPED
1 TSP GINGER, FINELY MINCED

CHOCOLATE POUND CAKE
                        Grandma Watkins
 
Cream together:
          ¾ lb. butter (3 cubes)
          3 cups sugar
 
Add one at a time and mix well after each addition:
          5 eggs
 
Sift together:
          3 cups flour
          ½ tsp. baking powder
          ½ tsp. salt
          4 T. cocoa
 
Add alternately with
          1 cup milk
          1 T. vanilla

CHOCOLATE OATMEAL CAKE

Mix together and let cool in a covered bowl
          1 ½ cups boiling water
          1 cup regular oatmeal
          1 cube butter
 
Mix together in a large bowl:
          1 cup sugar
          1 cup brown sugar
          2 eggs
          1 tsp. vanilla
 
Whisk together and then add to sugar mixture:
          ¼ cup cocoa

CHOCOLATE CHIP
MUFFINS

1 Egg
¼ Cup Vegetable Oil
½ Cup Sugar
1 Tsp. Salt
½ Cup Milk
1 ½ Cup Flour
2 Tsp. Baking Soda
1 Cup Chocolate Chips

Grease muffin tin.
Mix all ingredients with a wire wisk.
Don’t over mix.

Spoon mix into muffin tins ¾ full.

Bake at 400°F
Bake for 15 Minutes
