CREAMY FROZEN FRUIT SALAD

1 8oz. Cr. Cheese (softened)  

1 8oz.can crushed pineapple

1/2 c. sugar    

1/2 c. chopped pecans

1 jar 10oz. Maraschino cherries

1 8oz. Tub Cool Whip

1 can Mandarin oranges

 

Beat the cream cheese sugar until fluffy. Drain fruit and chop cherries and cut some of the oranges. Add pineapple, pecans, some chopped cherries, (saving some for garnish) to the cream cheese mixture. Fold in whipped topping and most of the oranges.  Line muffin tins with paper liner and spoon fruit mixture into cups, garnish with pieces of cherries and oranges. Freeze firm. Remove from freezer 10 minutes before serving.  This recipe yields about 1 1/2 doz. Jack loves these. I got this out of a Country Magazine.

    This sounds absolutely OUTSTANDING. So much for sticking to my south beach diet this weekend! :)
