Rice Pudding - For Diabetics

1/2 cup egg substitute
2 cups fat-free milk
1/2 cup SPLENDA® Granular
1/2 cup dark raisins
1 1/2 cups cooked white rice
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
  1. Preheat oven to 325°F.
  2. In a large bowl, combine egg substitute, milk, SPLENDA® Granular, raisins, cooked rice, vanilla and salt. Mix well.
  3. Add cinnamon and nutmeg.
  4. Pour into a 10 x 6-inch glass-baking dish. Bake for 25 minutes.
  5. Sprinkle with cinnamon and stir.
  6. Continue baking for an additional 40 minutes or until knife inserted halfway between edge and center comes out clean.

Makes 6 servings.

Calories 170, Carbohydrates 30 g, Protein 9 g, Dietary Fiber 1 g, Total Fat 2 g, Saturated Fat 0.5 g,
Cholesterol 2 mg, Sodium 300 mg.

    I’m not a diabetic but I have a high glicemie. I was wonder if this food is recomended also for me?

    The pudding what u have given here is quite easy to make and is very delicious as well.And as this is sugar free I would like to make it regularly for my dad.

    The pudding is quite easy to make and seems to be delicious and hygine. This definetely will be liked by the diabetic patients, as pudding is the favouriate of many.

    There are lots of people who could not enjoy sweet or pudding because of its sugar content but it seems that you have done a healthy food wherein they tend to enjoy it already. I think that eating sweets and desert is no longer harmful to people who have diabetes because they tend to create desert and drinks which are zero sugar.

    This is very good and quite easy on the stomach as well.. when my father had stomach cancer I would feed him a similar recipe. Good stuff!

    Hey dude, its nice to have such a good recipe of Rice-Pudding as there are many diabetic patients all over my surroundings. I think this would give lot of relief for them as they can have some sweet and hope it tastes good. I must try it out myself.

    A lot of diabetic foods work well in diets as well; cuts back on insulin spikes, thus reducing cravings. Great post!

    This certainly is a great healthy food for diabetics - will be sending this recipe off to my aunt. I particularly like the dark raisins among the ingredients.
